Taiyaki: Japanese filled cookies in St. Petersburg

Taiyaki is a traditional Japanese fish-shaped cookie whose literal name translates to baked sea bream.

Taiyaki was invented in Japan about 100 years ago at the Tokyo confectionery shop Naniwa-ya in 1909.

But the origin of taiyaki may also be related to another type of Japanese cookie - imagawayaki, called "oobanyaki" in the Kansai region. Imagawayaki was first sold during the Edo era near the Imagawabashi Bridge in Tokyo's Kanda Ward. Imagawayaki is similar in many ways to taiyaki, but has a round shape and a softer texture.

The origin of the fish form is unknown. The most common version is that at that time sea bream was very expensive, and the liver was shaped like a fish so that the buyer would feel that it was something luxurious. Also, the “tai” in the name of the cookie is similar to another Japanese word “medetai”, meaning happiness and prosperity. Because of this, taiyaki is often eaten to attract good luck .

Taiyaki is made from regular pancake or waffle batter, which is poured into a mold shaped like a fish on both sides. The filling is then added and the taiyaki is fried until golden brown.

Traditionally, taiyaki fillings include sweet beans, shiroan, custard, chocolate and sweet potatoes. However, you can find taiyaki filled with cheese, sausage, okonomiyaki and other things.

Cooking taiyaki

1. Mix flour, salt, sugar and water in a bowl. Add soda and stir again.

2. Turn on the stove and place the pan on the fire so that it warms up, but does not get hot. Then turn the mold over to the other side so that the mold is warm on both sides.

3. Grease both sides of the taiyaki pan (taiyaki pan) with oil and place the dough in both fish on one side of the pan (the other half for taiyaki should be left empty), so as to fill their bottom, but do not fill the space completely, leaving room for subsequent ones layers. Then spread the filling in an even layer on the laid out dough, about 5 millimeters thick. Afterwards, fill the fish on top of the paste with dough and close the mold.

4. Place the pan on the fire and bake for about 5 minutes. Afterwards, you need to remove the pan from the heat, open it and check the readiness of the cookies. If the dough is damp or has not turned golden, continue baking, alternating sides.

5. Do not immediately remove the finished cookies from the mold. Let it cool for 2-3 minutes, then open, add the cookies and continue the same process with the dough and filling.

Taiyaki – translated from Japanese means “baked sea bass” (tai – perch, bream; yaki – fry, bake). In 1908, taiyaki was first made in Tokyo, and literally within a couple of years the dish began to be prepared in all cafes in Japan. There is still debate about where to start eating this fish - from the head or from the tail.

Taiyaki is made using waffle batter. Pour the batter into a special fish-shaped mold, add the filling, then close the mold and cook for 5-7 minutes. Everything is very simple, but how nice it is to eat golden taiyaki with your favorite filling!


In Japan, the most common fillings are sweet anko bean paste, custard, chocolate and banana. We began to adapt the filling a little to Russian tastes and prepare this delicacy with apricot, cherry, cranberry jam, salmon, ham and cheese, and bacon.

Taiyaki in St. Petersburg

There is a small cafe in St. Petersburg called “Tayaki”. In the center of the Northern capital, where three metro stations are located at once (Sadovaya, Spasskaya, Sennaya Square), in Brinko Lane, in house No. 3 you will find a small room where Japanese music sounds and the unique atmosphere of the land of the rising sun is recreated. Here you can not only try an unusual Japanese dessert, but also watch the cooking process. The cafe area is quite small, but it is very cozy here.

On weekends, the cafe is quite crowded with visitors, mostly young people. Your order will be completed in 15-20 minutes. But during this time you can watch the process of preparing a Japanese dish, see how much filling was put into your cookies. There is a small selection of authentic Japanese products on the counter.

How to cook

Taiyaki Pan is a special oven into which pre-prepared batter is poured into a fish-shaped pan.

Then, according to your order, fill the left half of the fish with the filling.

A little more dough is poured around the perimeter of the filling and the taiyaki pan is closed for a few minutes.

When the oven is opened, we see golden, but not exactly beautiful fish.


The cookies are cut along the contour and placed in individual bags, on which it is written what filling this product contains.

Adzuki beans are sold in stores and are prepared like all legumes: after pre-soaking in water overnight, they are boiled for about 2 hours.

Honey should be liquid. If it has already thickened, it should be heated in a water bath or in the microwave, but under no circumstances boil it.

Coat the pancake with the prepared paste, cover the top with the second one and press down a little, but so that the filling does not come out through the side slots.

Dorayaki is an everyday dish, they are not served on special occasions, however, if desired, the pancakes can be decorated with chocolate topping, whipped cream, green mint leaves, berries or fruits.

  • You should always let the dough sit for about half an hour between kneading and cooking so that the gluten is released from the flour and carbon dioxide in sufficient quantities enriches the dough with bubbles that appear as a result of the reaction of soda.
  • Before baking pancakes, the frying pan must be well heated.
  • To prevent the dorayaki from sticking, before baking the first batch, you should grease the surface of the pan with a small amount of oil and wipe off the excess with a paper towel.
  • In order for the color of the pancakes to be uniform, the pan must be heated, and the pan itself must be dry, without excessive amounts of oil.
