To prepare heh from carp, you will need only fresh fish, because you don’t have to process it at high temperatures! So, cook heh immediately after returning from fishing - it will come out fresh and safe. Let's take one carp, about 1.5-2 kilograms. We will also need:

  • carrots - 4 pieces,
  • onions - 3 pieces,
  • vinegar 25% – 100-150 milliliters,
  • salt, black and red pepper, coriander,
  • garlic - 4 cloves,
  • vegetable oil - 4 tablespoons.

A step-by-step recipe for carp heh always starts with one thing: we need to cut and slice the fish. For the convenience of eaters and easy softening of small bones, we need to cut the carp into small cubes with a side of 1.5 centimeters. To do this, we gut fresh fish, remove scales, make an incision around the head and pull the skin off the carcass. Remove the fillet from the bones and cut into pieces. Then put it in a container and sprinkle with salt, mix.

We clean the vegetables. They need to be cut: the onion into thin half rings, and the carrots into long narrow slices, as they usually cut for Korean snacks. You can use a special grater, but do not use a regular grater - the carrots on it will be too small, thin and will not crunch. Sprinkle the chopped onion with salt and squeeze well to release the juice. Add the onion to the fish, pour vinegar all together.

In a separate container, salt the carrots, sprinkle with black and red pepper, add ground coriander and 50 milliliters of vinegar. Squeeze out the carrots too.   • carp - a carcass of 5 kilograms,
  • onions - 5 pieces,
  • cilantro - ½ bunch,
  • parsley - ½ bunch,
  • vinegar 25% – 0.5 liters,
  • water - 200 milliliters,
  • fresh cucumbers - 3-4 pieces,
  • red and black pepper - to taste,
  • hot capsicum - 1 piece,
  • vegetable oil - 100 milliliters,
  • soy sauce - 100 milliliters,
  • salt to taste

Like any tasty fish, carp goes well with fresh herbs and fresh cucumber. And in the appetizer heh this combination is fully revealed. To prepare it, we fillet a large carp: clean, gut, remove the skin, remove the bones and backbone, cut into strips as thick as a finger. Place all the pieces (about 3 kilograms of them) into a saucepan, add some salt, add vinegar and water and leave to marinate for a while. While the fish is soaked in vinegar and softens, peel the onion and cut into strips. In a frying pan, heat about half of the total amount of oil and lightly fry the onion in it until it just becomes transparent. Cool the onion. Cut the cucumbers into long strips and finely chop the greens. Cut the hot pepper into small rings.

In the container where our carp heh will be infused, place a layer of fish, sprinkle with spices, put a layer of sautéed onions, cucumbers and herbs, a couple of onion rings, then again a layer of fish. How to choose fish for heh

Sea fish is better suited for heh. It makes the dish tender, juicy and moderately salty. You can take fresh tuna, pink salmon, salmon or mullet. But the combination of different types of fish turns out tastier. So, in Korea they often make heh from pollock and chum salmon.
